Classic Catnip Nepeta cataria Heirloom - Medicinal 2-3 ft. Hardy Perennial

Brought to the United States by European immigrants, Catnip is the easiest herb to grow. Fresh or dried it is a euphoric for cats and a mild sedative for humans. It is drought tolerant once established. Scarify seeds to aid germination by placing seeds between two sheets of extra fine sandpaper and rubbing them lightly back and forth 3 to 4 times. Seeds can be started indoors or sown outdoors up to two months before last frost. Thin plants when they are 3-4 in. tall. Leaves can be picked anytime the cat wants them! Use fresh or dried.

Cilantro - Santo

Both seed (coriander) and leaves (cilantro) are used in numerous cuisines from around the world. Often associated with Mexican dishes, this strong scented herb grows out with flat, parsley look-a-like leaves for chopping into salsas and other preparations. Seeds are reputed to help reduce stress. Easy to grow and tolerant of cooler conditions, cilantro prefers direct sun. Fully grown, it is cut at a height of 12-18”. Direct seeded at 1?4” deep, 2” apart, and thinned to a final spacing of 4-6”. Bolt resistant strain.

DILL - BOUQUET

The fine, sweet leaves and bluish-green color make this the variety of choice for home gardeners and market growers. Cut dill leaves before plants begin to flower or allow to flower and harvest seed umbels for pickling. This hardy and quick growing annual will reach up to 3’ or more in height. Direct seed 1/4” Deep, thin to a final spacing of 6-8”. Can be planted all summer long for a continuous harvest of “dill weed” and flower heads.

Purple Coneflower Echinacea Echinacea purpurea 2-3 ft.

The easiest of the Echinaceas to grow, the rose-purple, daisy-like flowers have burnt orange centers. Blooms from July to September and makes a long-lasting cut flower. As a medicinal, it is said to stimulate growth of blood cells and enhance the immune system. 2-3 ft. plant with 3 in. flowers. Perennial.

Chives Allium schoenoprasum 8-12 in. Hardy Perennial

Dense clusters of grass-like foliage are mildly onion-flavored, contain Vitamin C, some iron, and can help promote digestion. Both flower and stem can be cut anytime for use in salads, soups, or stir-fries. 6-12 in. plant produces 1-2 in. lavender flowers that bees love. Hardy perennial.

CHIVES - GARLIC

Similar in most ways to regular chives but evinces a delicate garlic flavor. The plants grow more slowly than standard chives and are slightly less hardy. The white, star-shaped flowers are long lasting, ornamentally beautiful and unlike any other blooms. Makes for a great addition to salads and are a delicious addition to most dishes. Direct seeded at 1/4” apart, thinned to a final spacing of 12” in fall or early spring. May not flower in its first year of growth. Can also be started as a transplant 4-6 weeks before planting date. Harvest the leaves and flower heads.

Sweet Marjoram

A mild and sweet relative of oregano. Used fresh or dry. Many gardeners have successfully over-wintered this tender perennial, while others pot it up in the fall to bring delight to a winter kitchen. Once spring warms our gardens, it can be replanted outside. Start indoors and transplant in well-drained soil. Transplants can be started 8-10 weeks before planting date. Sow seeds 1?8” deep or sprinkle seed onto soil surface and press into soil with finger, then cover gently. Keep moist by misting, being careful not to dislodge seed with water. Separate and plant 18” apart. Harvest stems to hang in bundles. Leaves can be easily stripped off when dry.

Thick aroma that makes your mouth water for Italian food. A delicious addition to pizza. As with many other culinary herbs, oregano also has medicinal value, aiding digestion with its warmth. Has anti-fungal properties, with the essential oil used for systemic candida infections. Start indoors and transplant into well-drained soil. Transplants are started 4 weeks before planting date. Sow seeds 1/8” deep or sprinkle seed onto soil surface and pressed into soil with finger, covering gently. Keep moist by misting. Transplanted at 18” apart. When harvested, cut stems to hang in bundles. Leaves can be easily stripped off when dry.

Parsley-Italian Flat Leaf

The standard flat variety for either fresh or dried use as a seasoning. Flat and glossy leaves are toothed on the edges. Stems hold leaves upright, making it easy to bunch. A very nutritious and tasty addition to meat or vegetable dishes, soups or even salads.

Parsley-Moss Curled

This particular variety is a high yielder of thickly curled leaves. So thick, in fact, that the plant resembles moss. Tall, 12”, compact plants grow long stems for bunching. Vigorous and uniform. Curled-leaf parsley is a more subtle seasoning than the Italian flat leaf. Makes a beautiful garnish.

Heirloom variety from the 1800's with leaves that are deeply cut and curled, resembling moss. Excellent flavor fresh or dried. Standard, early maturing, vigorous, compact plants. 75 Days

Thyme

Petite leaves and mini spikes of pinkish-lavender flowers grace the woody stalks of this small, hardy perennial. Makes a beautiful border hedge along herb and flower beds, growing to about 6-10”. A very versatile culinary staple which can successfully flavor any meat and vegetable. Try a cup of thyme tea for persistent coughs and sore throats. Europeans believed this plant was home to the fairies and thus it was included in every cottage garden. Although transplants are recommended you can also direct sow seeds 2-3 weeks before last frost date in spring. Transplants can be started 4 weeks before last frost date. Sow seeds 1?8” deep or sprinkle seed onto soil surface and press into soil with finger, then cover gently. Separate and plant 8” apart.

One of the hardier thymes, these highly fragrant plants will produce large quantities of aromatic, tiny leaves that are bright green when young maturing to a dark blue-green. 90 days to flower

Garden Sage Salvia officinalis Heirloom 2-3 ft. Hardy Perennial

Main variety grown for culinary use. has fragrant gray-green leaves and spikes of purple flowers. Reaches full potential in the second year. Direct seed when ground can be worked and danger of frost has passed. Can be started indoors 4-6 weeks before last frost, and transplanted when all danger of frost has passed. Can be used fresh, frozen or dried.

This is one of my all time favorites. It grows well in northern soils, heavy or light, it comes back year after year and grows into a big shrub if you let it. Cut it back and dry it or peal off the leaves. Prune out the dead in mid summer to let in air and light. Very attractive plant in any garden.
